Simple and delicious recipe that will become a family favorite! Great for holiday entertaining and who doesn’t love Vodka Cream Sauce?!
14 oz bag of Heart Pasta (or another short shape), you’ll use approx. 1/2 the bag
2 T. olive oil
1 yellow or Vidalia onion, chopped
3 cloves garlic, sliced
1 28 oz. can crushed tomatoes
1/4 cup vodka
Pinch of red pepper flakes
1 lb. medium or large shrimp, peeled and deveined
1/4 cup heavy cream
1/2 t. kosher salt
1/4 t. black pepper
1/2 cup chopped fresh basil
1/4 cup Parmesan cheese, grated + more for garnish
Cook pasta according to package directions, drain, rinse, toss with 1 T. olive oil. Set aside.
In the meantime, heat 1 T. oil in a large saute pan, and add onions and saute until translucent, approx. 3-4 minutes. Add sliced garlic, and saute an additional 30 seconds, until fragrant.
Add tomatoes, vodka, and red pepper flakes and bring to a simmer. Cover and reduce the heat to low, and cook for another 10 minutes, stirring occasionally.
Add shrimp, cream, salt, and pepper, and stir, uncovered. Cook until shrimp are cooked through, about 5-6 minutes.
Add cooked pasta (add about half the pasta and save the rest for another night, or after school snack!) , fresh basil, and Parmesan cheese. Gently combine!
Serve with additional fresh basil and grated Parm! Enjoy!
